Buffalo Chicken Salad



Ingredients:

2 boneless chicken breast halves

1/4 cup wing sauce

1 bag of lettuce

2 carrots cut into small strips

1/2 cup Blue Cheese Dressing


Directions:

Preheat the oven to 375 degrees.  Cut the chicken into strips and toss with the wing sauce of your choice.  Arrange the chicken in a baking pan and bake for about 10-12 minutes.  Remove from oven.

Toss your carrots and lettuce together.

Top with chicken and then add the Blue Cheese Dressing.

Beer Mac 'N' Cheese Soup



Ingredients:

2 cups veggie broth

1 12oz beer

1 cup frozen, chopped onion

1 Tbsp yellow mustard

1 Tbsp Worcestershire sauce

1 1/2 cups elbow macaroni

1 tsp cornstarch

2 8oz blocks shredded cheddar cheese

1 cup milk

salt and pepper to taste

Directions:

In a large pot, place veggie broth, beer, frozen chopped onion, mustard and Worcestershire sauce.

Bring to a boil.  Add the uncooked macaroni.  Cook for 7-8 minutes.  Add the shredded cheese.  Stir until melted.  Finally add the cornstarch, milk and salt/pepper to taste.
