Guacamole Deviled Eggs



Ingredients:

6 hard boiled eggs, cooled, peeled

1 large avocado, peeled and pit removed

1/4 cup finely minced yellow onion

1 tomato, seeded and diced small

1 jalapeno, seeds and veins removed, diced small

1/2 teaspoon chili powder

1/2 teaspoon ground cumin

1/4 teaspoon garlic powder

1/4 teaspoon salt

1 tablespoon plus 2 teaspoons lime juice

1 tablespoon sour cream

cilantro for garnish


Directions:

Cut the eggs in half lengthwise. Remove the yolk. Place the yolk in a bowl. Place avocado in the bowl. Mash together with the yolk. Stir in all remaining ingredients, except for cilantro. Mix well.

Spoon filling into eggs. Top with a cilantro leaf for garnish. Serve.

Apricot Glazed Ham



Ingredients:

1 (10 pound) ham

cloves

2/3 cup apricot jam

1/3 cup brown sugar

1/4 cup dijon mustard

1 orange, zested


Directions:

Place the ham cut side down in a large baking pan and cover in foil.

Bake in a preheated 250F oven until a meat thermometer read 130F, about 3 hours.

Cut crisscrosses around the ham in 1 inch intervals and stud the ham with cloves in the intersections.

Mix the apricot jam, brown sugar, mustard and orange zest and glaze the ham with 1/4 of it.

Continue to bake the ham until it reaches 140F, about and hour, basting every 15 minutes.

Remove from oven and let rest before carving.
